Chicken basil pesto pasta

To make pesto you will need;

Using a hand held stick blender blitz below ingredients to make pesto

Pinch of salt

1 Cup of basil leaves,

¼ Cup of pine nuts

¼ Olive oil

1 Clove of garlic chopped

Other ingredients

500gms chicken thigh fillet sliced and

1brown onion diced

250ml cooking cream

500ml penne pasta

Salt

Method

Brown off chicken and onion in a frying pan, once cooked through reduce heat and add the cooking cream.

Add pasta to boiling salted water for 10minutes.

Add the pesto to combine all ingredients slowly to cover and coat chicken in the frying pan and turn to medium heat.

Meanwhile pasta should be almost cooked, once the pasta is slightly chalky, drain off pasta and add to the pesto chicken. Give a good stir through and continue cooking on a low heat until pasta cooked to your liking.

* If you want a thicker sauce add half a cup of mozzarella cheese whilst cooking

* Whilst it will be green enough, add some fresh spinach leaves for extra goodness
