Potato, bacon and chicken slow cooker soup
The weather still has us guessing so this soup might keep the spirits up this weekend and earn some points with the family or give the busy professionals a few meals up their sleeves.

You will need a slow cooker, a frying pan and about 20mins.
Ingredients
500gms rindless bacon chopped
2 medium carrots sliced
4 cloves garlic roughly chopped
2 celery stalks sliced or a cup of brown mushrooms sliced
5 white potatoes quartered
1 onion diced
2 sprigs thyme
1kg chicken thigh fillets diced into bite sizes
1 litre salt free chicken stock
Method
Pan fry the bacon slightly with the garlic and place in slow cooker.
Pan fry chicken thigh fillets until lightly golden, place in slow cooker.
Sautee the onion, carrot, mushrooms or any vegetable you like (not beans at this stage as will go very soggy) in some random spices you have on hand, such as garlic and herb and place in slow cooker.
Using the pan, pour in some of the salt free chicken stock and scraping the bottom of the pan to get all the good bits off the bottom, give it a good stir and place in slow cooker. Add some pepper and a pinch of salt. Add remaining stock.
Give it a good 2 hours in the slow cooker and give it a stir.
After 2 hours place the quartered potatoes in the cooker and set the timer for the remaining 2 hours.
*You can serve over some cooked pasta for the kids, serve with thick crusty bread for dunking or add some fresh spinach leaves upon serving.
Whilst this will give you 4 hours of free time, do not forget you will need to be on hand to check it, don't leave unattended!
