Retro apricot curry sausages

Get out the trusty slow cooker again.

Ingredients πŸ›’

1 can 400g – 800g (depends how many apricots you want) of halved apricots, juice drained

1 can 650ml of apricot nectar, found in juice section

1 pkt of French onion soup mix

2 carrots sliced

1 onion roughly diced

1 – 2 tbsp of Keen’s traditional curry powder (you can leave out if not a fan)

10 – 16 thin sausages of your choice, works well with chicken sausages also.

Method πŸ΄

Place sausages in the base of the slow cooker along with the onion.

Combine the soup mix, curry powder and the nectar, whisk together till all combined well.

Pour the juice mix over the sausages and place the drained apricots over the mix.

Pop in the carrots at about the 3 hour mark and give it a good stir to combine all the goodness.

You will need to cook for a slow 5 hours in the background whilst you take care of weekend stuff.

* Serve over some garlic mashed potato
* Add some green beans towards the last hour of cooking
